Maddie’s Table Watercress & Rosemary Mash

 

How does creamy, herby mashed potato sound on a dark, cold evening? Pretty good, right?

Rosemary & Watercress Mash

-       4 golden potatoes, peeled & chopped

-       ½ cup whole milk

-       4 tbsp unsalted butter

-       3 sprigs rosemary

-       3 cloves garlic, sliced finely

-       3 tbsp grated parmesan

-       ½ cup watercress, chopped

-       Salt and pepper

1.     Boil potatoes for 30-45 minutes until soft. Mash until very smooth; mix in milk with a fork.

2.     Melt the butter in a saucepan over medium heat. Add rosemary and garlic. Cook until fragrant, then remove the rosemary sprigs.

3.     Add the potatoes to the butter and mix thoroughly. Stir in parmesan, salt and pepper. Add watercress and allow to cook for 1-2 minutes, until just wilted.
