Hanna Sillitoe's Minty Pea & Watercress Soup

 

We were very excited to reach out to Hanna Sillitoe (@mygoodnessrecipes) as she certainly knows her stuff when it comes to plant-based health. As we all know, watercress is brimming with good nutrition and exciting health benefits, so we thought she would be the perfect person to showcase some of them.

Not only did Hanna warmly receive some goodies from us, she also created some amazing recipes with our watercress! This was one of our favourites, so we had to share it:

Minty Pea & Watercress Soup

-       150g Watercress

-       2 x leeks

-       2 x celery stick, chopped

-       1 tbsp olive oil

-       200g peas

-       1 litre vegan bouillon

-       Handful of fresh mint leaves

-       Salt & pepper

-       Sourdough croutons to garnish

-       Vegan mayonnaise & horseradish cream to garnish

1.     Warm the olive oil in a pan. Add the chopped leeks & celery. Turn the heat down and soften for approx. 10 minutes.

2.     Add the watercress, peas and mint and pour over the bouillon. Simmer for 5 – 10 minutes.

3.     Remove from the heat, blitz with a hand blender until smooth.

4.     Decorate with a spoonful of vegan mayonnaise & horseradish cream (add a little water to thin it), croutons and fresh herbs. 

Hanna’s top tip: this soup freezes well and is so full of goodness on chilly days.
