Ham, cheese and watercress sandwich

50g/2oz soft cheese

75g/3oz watercress

5ml/1 tsp wholegrain mustard

Salt and freshly ground black pepper

4 slices of wholemeal bread

2-3 slices ham


Reserve a handful of watercress. Roughly chop the remainder and mash with the cheese and mustard. Season to taste.

Spread two slices of bread with the cheese mixture and top with the ham and reserved watercress. Finish with the remaining bread and cut each sandwich in half.
