Chicken and Mango Salsa Salad

with Watercress, Spring Onions, Chillies, Coriander and Lime

Serves 1

Ingredients: 

-       Handful of leftover cooked Chicken

-       1 mango, diced

-       85g Watercress

-       3 spring onions, finely chopped

-       1-2 chillies (or more…), finely chopped

-       Coriander, roughly chopped

-       1 Lime

-       Olive oil

 

Method:

  1. Make the mango salsa: combine mango, spring onions and chillies in a bowl. Add a little olive oil and lime juice to taste and set aside. This will make more than one serving, but that means you have more for later!

  2. Lay down a bed of watercress on a plate and scatter some of the mango salsa over the top. Pop your cooked chicken on top and give everything a squeeze of lime.
