Watercress oil

Preparation: 10 minutes   Cooking: varied    Serves: varied


  • 1/2 bag of watercress

  • 1 Lime, juice and zest

  • 1 clove garlic, peeled and crushed

  • Pinch of sea salt flakes

  • 250 ml of light oil - olive / vegetable


  1. Juice and zest lime, roughly chop garlic

  2. Blend with watercress and a little bit of oil.

  3. Add the rest of the oil and infuse in a sealed jar placed in a warm room. Two weeks is optimum but up the blend to oil ratio if you need it sooner.
