1/2 bag of watercress
1 Lime, juice and zest
1 clove garlic, peeled and crushed
Pinch of sea salt flakes
250 ml of light oil - olive / vegetable
Juice and zest lime, roughly chop garlic
Blend with watercress and a little bit of oil.
Add the rest of the oil and infuse in a sealed jar placed in a warm room. Two weeks is optimum but up the blend to oil ratio if you need it sooner.
