Prep time: 15 minutes Serves 6-8 as a starter
This simple recipe takes minutes to prepare but is still a real showstopper, perfect for an easy Christmas starter.
1 side smoked salmon, D cut (sliced horizontally)
1 x 85g bag watercress
1 medium sized cucumber
For the dressing:
2 tbsp crème fraiche
1 tsp honey
1 tsp Dijon mustard
1 tbsp balsamic vinegar
Salt to taste
First make the dressing by combining all ingredients in a small bowl and whisking together. Set aside while you prepare the rest of the ingredients.
Next slice the cucumber in half length-ways and use a tea spoon to scoop out the seeds. Thinly slice the cucumber so that you get nice crescent-shaped pieces. Thinly slice the radish.
Take a large slate or board and place the side of salmon on top one slice at a time, folding each slice to give the whole dish some height. Scatter over the watercress, cucumber and radish before drizzling with the dressing and serving to your guests. Bon appetit!
