Rare roast beef and watercress sandwich

  • Four slices of wholemeal bread

  • 1 tbsp creamed horseradish

  • Slices of rare roast beef (to taste)

  • Handful of watercress



Lightly butter four slices of wholemeal bread, then spread creamed horseradish on 2 of the slices. Top these with slices of rare roast beef. Season and finish with a generous handful of peppery watercress. Place the other bread buttered side down on top and cut into triangles. Serve straight away or wrap and chill until later.
