175g smoked trout fillet
Zest and juice of half a lemon
3 tbsp virtually fat free mayonnaise
4 lengths of granary baguette or wholegrain rolls
Lightly mash the smoked trout fillet with the mayonnaise and the zest and juice of half a lemon. Spread the mixture between 4 lengths of granary baguette or wholegrain rolls and top with sliced cucumber and plenty of fresh peppery watercress.
