Smoked trout and watercress baguette

Ingredients

  • 175g smoked trout fillet

  • Zest and juice of half a lemon

  • 3 tbsp virtually fat free mayonnaise

  • 4 lengths of granary baguette or wholegrain rolls

  • Sliced cucumber

  • 50g watercress

      

Method

Lightly mash the smoked trout fillet with the mayonnaise and the zest and juice of half a lemon. Spread the mixture between 4 lengths of granary baguette or wholegrain rolls and top with sliced cucumber and plenty of fresh peppery watercress.
