Top 10 BBQ Recipes to See You Through Summer

It’s the peak of summer and there’s a bank holiday just around the corner –  it’s officially BBQ season! But, what can you make on a barbecue besides Dad’s overdone sausages? We’re here to help. We have rounded up our Top 10 favourite recipes that are ideal for your next garden party.

1. Sticky Pork Belly

We’ve served these with wraps to make burritos, but you could serve them with anything you like. Why not try a couscous salad? Or keep it traditional and bring out the bread rolls. Either way, using your BBQ on a low heat to slow-roast this pork will send your tastebuds wild.

2. Grilled Vegetable Skewers with Watercress Salsa

Not only is this recipe vegan, the skewers are absolutely stunning and make for an Instagram-worthy plate! The chunky watercress salsa is sweet, tangy and punchy – the perfect accompaniment to the glazed vegetables.

3. Mediterranean Chicken Skewers with Watercress Pesto

For the meat eaters, try these sumptuous skewers. They use succulent chicken thighs with plenty of fresh vegetables to create a tasty treat that is perfect for grilling. We’ve served ours with a beautifully garlic watercress pesto – it’s great for dipping!

4. Whole BBQ Mackerel

Fish fans will love this recipe; mackerel with garlic, chilli, lemon and watercress butter. Your guests will already be impressed by the sight of a whole, grilled fish, and then the flavour will really blow their socks off!

5. Smoky Brisket Sliders

A bit of a twist on the classic burger and another recipe that is perfect for experimenting with your BBQ as a low & slow cooker. These bite-size brisket sliders are great for all ages and the moist beef pairs perfectly with a handful of watercress.

6. Spinach & Watercress Veggie Burgers

Another veggie delight! These burgers are bursting full of nutrients from the leafy greens that bulk them out. If you’re unsure on making your own, we have a really helpful video tutorial on making veggie burgers at home. Keri’s step-by-step guide will help you master this recipe in no time!

7. Lamb and Watercress Burgers

Something a little different from your 4-pack of beef burgers! These lamb and watercress burgers will add a little something extra to the BBQ scene this summer. These are delicious with our recipe for dill yoghurt dip and can be served in traditional buns, or with flatbreads to mix it up a little.

8. Black Bean and Watercress Burgers

A more traditional style vegetarian burger made from beans and watercress. These are full of flavours like chilli, garlic, onion and sweet potato, making for a yummy summer dinner. Best served in buns with fresh avocado and tomato relish!

9. Charred Sweet Potatoes

These potatoes are an exciting side dish for your next BBQ, although with beer caramelised onions and watercress chutney, could easily be served as a main too! Best cooked over hot coals (although you can do them in the oven if the weather takes a turn for the worse), these will liven up any plate of food.
