Serves: 4

Cooking Time: 15 mins

Ingredients:

1 small onion, finely chopped
2 potatoes, diced
2 1/2 pints chicken stock (water can be substituted for even fewer calories!)
3 large bunches watercress, stems removed
salt and pepper, to taste

Directions: 

Sweat the onion in a little chicken stock or water until translucent. Add the potatoes and the rest of the chicken stock and bring to the boil. Add salt and pepper and simmer until the potatoes are soft.

Add the watercress and stir for 3 mins.

Remove from the heat. Blend.

Put the soup in a small metal bowl and place in a sink full of ice to keep the colour green.

  1. Elizabeth Hurley was born in 1965 in Basingstoke, Hampshire, as the younger daughter of Angela and Roy Hurley. Her father was a major in the Royal Army Educational Corps; and her mother was a teacher
