Cheap Eats: Sweet Potato and Feta Frittata

Serves 4 | 90p per portion

Ingredients

  • 6 Eggs, beaten together

  • 1 large sweet potato, diced

  • 1 red onion, chopped

  • 80g Watercress, roughly chopped

  • 100g Feta, diced

  • 2tsp thyme

  • 1tsp rosemary

Method

  1. Preheat the oven to 180

  2. On a baking tray, toss the diced sweet potato in a little oil with salt and pepper and bake for 15-20 minutes, until tender.

  3. Meanwhile, in an ovenproof pan/skillet, fry the onions until soft. When the sweet potato is ready, add this to the pan along with the watercress, thyme and rosemary and mix everything together.

  4. Pour your egg mixture over the top before crumbling the feta in.

  5. Bake in the oven for around 10 minutes, but keep an eye on the egg. It should be firm and golden on top.
