Sweet pork and chilli stir fry with watercress

  • 1 tbsp vegetable oil

  • 450g (1lb) lean stir fry pork strips

  • 1 red pepper, cored and deseeded

  • 1 bunch spring onions, trimmed and sliced

  • 1 clove garlic, chopped

  • 2.5cm (1in) piece root ginger, grated

  • 1 (85g) bag watercress

  • 2 tbsp sweet chilli dipping sauce

  • 1 tbsp fish sauce

To serve:

  • Noodles or rice


Heat the oil in a large non-stick frying pan or wok, add the pork and stir fry over a high heat for 6-8 minutes, until browned.

Add the peppers, onions, garlic and ginger and stir fry for 2-3 minutes until tender. Add the watercress, chilli and fish sauces and stir fry for 1-2 minutes until the leaves have wilted. Serve straight away with noodles or rice.
