Quick Watercress Salad


  • 1 x 85g/3oz pack watercress
  • Dressing:
  • 1 tsp mixed peppercorns
  • 1 tsp mustard seed
  • 1 clove garlic, crushed
  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • ¼ tsp brown sugar
  • ¼ tsp salt


Place the peppercorns and mustard seed in a mortar and grind with the pestle. Pour into a small bowl and mix in the remaining dressing ingredients and toss with the watercress.
