Couscous with Lemon & Watercress

Couscous with Lemon & Watercress

Ingredients

  • 225g/ 8oz couscous
  • zest and juice of 1 lemon
  • 2 tbsp olive oil
  • 1 x 85g bag watercress, roughly chopped
  • ½ red onion, chopped
  • 2 tomatoes, deseeded and chopped
  • 150g/ 5oz cucumber, peeled, deseeded and chopped
  • salt and freshly ground black pepper

Method

Boil a kettle of water. Place the couscous, lemon zest and juice, olive oil and plenty of seasoning in a large bowl, then add 300ml/ ½ pt boiling water. Stir well, then leave to soak for 10 mins or until the water has been absorbed by the couscous.

Stir in the remaining ingredients, season to taste and serve.
