While Penny Ede explained how to hand-harvest (the traditional method of harvesting watercress), Mary Berry revealed a snack that she had been enjoying since her childhood: Raspberry Jam and Watercress Sandwiches.

Just in case there are any sceptics out there, we decided to give it a go ourselves and we can confirm it is delicious; the tartness of the raspberries compliments the peppery watercress perfectly! The crunch of fresh watercress against the sticky sweet conserve creates a delightful treat that we will definitely be including in our Afternoon Teas from now on.
